These tuna cakes are super high in protein and are great between bread for a sandwich and are also an amazing topper for a salad. I love meal prepping a big batch of these to have on hand for lunches during busy weeks!

Ingredients (makes 2):

  • 8 oz packaged tuna (I like the Safe Catch brand!)
  • 1 egg
  • 6 tbsp almond flour
  • 1/4 jalapeno, chopped (omit if you don’t like spicy!)
  • 1 tbsp lemon zest
  • 2 tbsp cilantro

Directions:

Mix all ingredients in a large bowl. Split into two portions and form into patties. Cook on griddle or in a skillet over medium heat for about 4-5 minutes each side or until golden brown.
